Gib Wrap worker- place giblets in trays to load in machine and run machine to wrap/package giblets to be re stuffed into whole turkey after processing.
Back up lead for Gib Wrap area. Oversee 10-12 workers and run area, including monitoring temps at 3 different chiller locations and complete all HACCP paperwork. Monitor and record temps during production on all AIB lines 1-10 and take appropriate action if anything is out of range temperature wise. Monitor and record temps of giblets and necks in chill room. Perform hourly AQL and record findings for any product that is out of spec. perform hourly count to precisely calculate number of necks and gib packs needed to make production for the day and ensure they are made.
